In a food processor, combine the tomatillos, garlic, onion, chiles, lime juice, and a hefty pinch of salt, pulse a few times to move stuff around, and then process until you have a thick purée. Add the cilantro and the cumin (if using) and pulse until the cilantro is evenly mixed and visible as flecks. Taste and adjust with salt if needed.
