  • 1–3 cloves garlic
  • Kosher salt
  • 4–5 cups fresh greens of choice, such as ramp tops, basil

Method

If using a mortar and pestle, put the garlic and a generous pinch of salt in the mortar and grind to a paste. Add the greens, little by little, and grind until they start to become smooth, drizzling in the oil along the way. Once all the greens have been incorporated, add more oil if the sauce seems too thick. If using a food processor or blender, combine the garlic and a generous pinch of salt
