  • 5 cups rice vinegar
  • 2 cups water

Method

In a heavy saucepan, combine the vinegar, water, honey, and salt over medium heat and bring to a simmer, stirring to dissolve the honey and salt. Remove from the heat and let cool for about 5 minutes until moderately warm. Then pour over the vegetable you’re pickling and let cool completely.
