  • 2 lb carrots, shredded on a box grater or in a food processor fitted with the grater attachment
  • 3 cups sugar
  • Grated zest

Method

In a heavy-bottomed pot, combine the carrots, sugar, lemon and orange zest and juice, salt, and liqueur (if using) and mix well. Let sit for 1 hour or so to allow the sugar and salt to penetrate the carrots.

Make a sachet of your desired aromatic blend with a piece of cheesecloth and twine. Tuck the sachet into the carrots and add a bit of water along with the nutmeg. Place over medium
