  • 1 lb soft unsalted butter
  • 4–6 anchovy fillets in olive oil, finely chopped
  • 1 shallot

Method

Using a stand mixer with the paddle attachment or a bowl with a spatula, mix together all the ingredients except the salt until airy and combined. The anchovies and capers both have salt that will perfume the butter, but give it a taste to see if you want more.

Spoon the butter onto a large sheet of parchment paper or plastic wrap, roll into a log, twist the ends to seal, and refrigerat
