  • 1 cup finely chopped garlic scapes
  • Olive oil, for sautéing if needed
  • 1 lb soft unsalted butter<

Method

If the garlic scapes are very fibrous, give them a quick sauté in a bit of olive oil until soft. If the scapes are young and tender to the tooth, they will be just fine raw.

Using a stand mixer with the paddle attachment or a bowl with a spatula, mix together all the ingredients until airy and combined.
