Billy likes to serve this with fried potatoes and cabbage cakes – a version of Bubble and Squeak – though, of course, plain boiled potatoes would be very good too.
Soak the salt cod or ling in cold water overnight, then rinse thoroughly under fresh water. Simmer the fish in fresh water for 10 minutes and strain.
Transfer the fish to a shallow tray. Add sliced raw onions and several whole onions stuck with cloves, sliced carrots and parsley (the quantities will depend on the size of the piece of fish). Cover with milk, add
