Ideally this should be made with Key limes from the Florida Keys or the Caribbean, which have a wonderful strong tart flavour.

Method

Make the crust by blending the softened butter with the cracker or digestive biscuit crumbs and vanilla essence. Spread and press the mixture around the bottom and sides of a 9 inch (23 cm) pie dish. Make
