As an alternative to gravy, you could serve this chicken with my Memphis Sauce (see the recipe following this one).
Season the flour with salt and pepper and combine the eggs and milk. Dust the chicken pieces with flour and then dip in the eggwash. In a large frying-pan heat the oil and fry the chicken gently to begin with, raising the temperature until it is as brown as desired and cooked through – this will take about 10-15 minutes. Remove from the pan and keep warm.
