All Mexican cookery starts with the tortilla. Buying them ready-made is simpler, but if you fancy having a go at making them yourself and can find some corn masa (speciality shops should have it), here’s how to do it.
Mix the masa or wholewheat flour and water in a bowl until they form a dough that holds together. Divide into 12 pieces and roll each between your hands to form a ball.
