One of the most refreshing, mouth-tingling salads to come out of North Africa. It is amazingly simple, and you can adjust the quantities to suit your own taste if necessary.

Ingredients

  • 4 cups bulgar wheat
  • 1 cup skinned, deseeded and finely chopped tomatoes
  • 1 cup mixed finely chopped spring onions and red onion
  • 1 cup chopped fresh coriander
  • 1 cup chopped fresh parsley
  • ½ cup finely chopped fresh mint
  • 2-3 cloves of garlic, very finely crushed
  • at least 1 cup lemon juice
  • at least ½ cup good olive oil
  • sea salt and black pepper

Method

Prepare the bulgar wheat according to the instructions on the packet. Combine all the ingredients in a salad bowl and serve chilled.
