This Cajun risotto is highly esteemed way down yonder in New Orleans. It was introduced by the Spanish and immortalized in song by the great Fats Domino: 'Jambalay, crawfish pie and filé gumbo . . . son of a gun we'll have some fun in the bayou . . .'
