  • 1.5kg (lb) baby squid, cleaned and prepared, see notes on page 205, with the ink sacs reserved

Method

Put the ink sacs into a sieve over a bowl and press them with a wooden spoon to extract the ink. Pour half the wine through the sieve to remove more of the ink — in fact, pass this liquid through the sieve two or three times to get as much ink out of the sacs as possible.
