  • your fresh garden peas
  • crisp lettuce, shredded
  • some cooked ham or streaky bacon, finely chopped
  • ½ onion, finely chopped

Method

Except when picked very young garden peas are a disappointment. And most gardeners are too mean to pick them young. So cook them like this.

Melt the butter in a pan with the bacon, onions and carrots and fry for a moment or two. Add the lettuce - this will give off a lot of liquid so stir in the flour until everything thickens. Add the peas, the stock cube and a cup or two of wat
