The Isthmus of Tehuantepec has many dishes known as molitos or “little moles” Some are sauces thickened with ground dried shrimp or other ingredients. Others, like this vegetable-beef medley that I ate at Adelina Santiago’s market stall “Fonda Adelina” in Juchitán, are what most people call soups. It is a common one-dish lunch meal.

The flavor of the soup depends on reducing the broth a lot in cooking, so it cooks over fairly lively heat.
