Smoother and lighter than a usual guacamole, this is adapted from a salsa that arrives with the huge platters of sausages and roast meats at the outdoor restaurant La Capilla in Zaachila. It is the perfect accompaniment to robustly spiced meats like Cecina Enchilada and Lomo de Puerco Adobado.
