Braised Okra is a very popular summer dish. On the islands and in the villages all over Greece you will find pans of okra in the sun, on rooftops, or on balconies, especially on Wednesdays and Fridays, the days when no meat is eaten.

This dish is somewhat time consuming to prepare, although less so than green beans. Frozen okra can be used very successfully.

Serve with fresh Country Bread and feta cheese.
