Big winter squashes appear in Greek markets in late September. As they are very large, they are usually sold in pieces. People from different regions use squashes to make wildly different dishes, such as squash cooked in syrup and studded with almonds, savory squash pie with leeks and cheese, sweet squash pie with cinnamon and sugar, and baked squash with garlic sauce.
