Sometimes grains are added to simple vegetable dishes to make them more nourishing. Bulgur, or cracked wheat, takes on a delicious flavor when you cook it with green beans and okra.
This dish was described to me by a distant relative who comes from Thessaly. She told me that she has never cooked it herself—she considers it to be a dish fit only for poor persons—but she remembers it from her childhood.
Serve with fresh Country Bread and feta
