Bergamot (baderang, Citrus bergamia) has a heavenly perfume, and the skin needs only to be scrubbed. I found some bergamots in the Santa Monica local farmers’ market, from which I made the preserve in the photo on the facing page. A citrus fruit found around the Caspian and often confused with bergamot is Balang (Citrus medica cedrata). It is somewhat similar to bergamot but much larger and more oval shaped, with a knobbly, thick yellow skin, which needs to be removed (as shown in the inset
