Clarified butter, also called ghee, gives a delicious nutty taste to rice and pastries and has a higher scorching point than regular butter. It is sold in specialty-food stores, but it is easy to make at home.

Ingredients

  • 1 pound/450 g butter, cut into small pieces

Method

  1. In a medium saucepan over low heat, melt the butter. When the butter is melted completely and bubbles form on top, raise heat to medium-low. Simmer for 15 to 20 minutes, skimming off the foam occasionally.
  2. Begin to stir with a wooden spoon until the majority of the solids are brown (about 15 minutes). Remove from heat and allow solids to settle to the bottom.</
