  • 1 pound/450 g dried tamarind pods
  • 8 cups/1.9

Method

  1. Place the tamarind pods in a medium saucepan and cover with the water.
  2. Bring to a boil, reduce the heat to low, and simmer for 1½ hours over low heat until the pods are soft. Add more water if necessary.
  3. Place a fine-mesh sieve over a bowl, drain the softened tamarind through the it. Use a masher push through and crush the pods to extract as much liqu
