If you decide to segment the fruit for this recipe, you can then serve it in chilled, hollowed-out citrus fruit skins (halve oranges, remove the flesh and stick the skins in the freezer). It makes a very sweet and pretty ending to a rich meal. Just serve the fruits in one of your favourite big serving bowls if that seems too tricky.

Ingredients

  • 150 g ( oz) caster sugar
  • finely grated zest and juice of 2 unwaxed

Method

  1. Put 170 ml (6 fl oz) water in a saucepan with the sugar, lime juice and mint leaves. Bring to the boil, stirring a little to help the sugar dissolve. Boil for 10 minutes - the mixtu
