Although it is a celebrated English summertime salad and sandwich filling, Coronation chicken is often done very badly. This super-spicy version with fresh fruit and my Mango and Ginger Chutney is the business. And it’s great for a summer picnic with a friend.

Ingredients

1 tsp. ground allspice
1½ tsp. curry powder
250 g<

Method

Stir the spices into the mayonnaise, then gently mix all the ingredients together. Adjust the seasoning and amount of chilli to taste.
Serve the chicken with slices of mango and watercress leaves, with the toasted almonds sprinkled on top.
