My son Zaion devised this colourful, healthy recipe for the school dinners he makes for Thames Christian College, the school next door to our café, Papine. It’s a brilliant way to get kids to eat more veg. This dish is vegetarian, but add some cooked chicken or ham, cut into strips, if you like something a bit more meaty.

Ingredients

  • 150 g ( oz) small broccoli florets

  1. Steam the broccoli, cauliflower and carrots until they are almost tender, then set aside. Cook the noodles according to the packet instructions, then drain.
