This Cuban recipe uses a sofrito - in this case a mixture of onion, garlic, tomato and pepper - with some succulent chicken pieces to make a delicious casserole. Serve it with couscous or rice and green vegetables or salad.


  • 4 tbsp sunflower oil
  • 1 onion, finely chopped
  • 3 garlic cloves, finely chopped


  1. Heat half the oil in a large casserole dish that has a lid over a medium heat and add the onion and garlic. Cook, stirring occasionally, for about 5 minutes, or until softened.
  2. Meanwhile, peel the tomatoes: cut a cross in the bottom of each and put them in a bowl. Pour over just-boiled water to cover and leave for 30 seconds, then transfer to a bowl of cold wat
