This delicious sauce goes well with my Coconut King Prawns or alongside a beautiful piece of salmon or some fried chicken.


  • 1 ripe mango, peeled, stoned and roughly chopped (see page 25)
  • 20 g (¾ oz) fresh coriander leaves


  1. Put all the ingredients in a blender or food processor and whizz until smooth.
  2. Adjust the seasoning to taste. Pour the sauce into a small bowl, cover with clingfilm and keep in the refrigerator until needed. Eat within a couple of days.
