A lovely dish, with good colour and gentle spicing, this is my dub-it-up take on a classic Indian favourite, pilau rice. Make an even more Caribbean version by using callalloo Instead of spinach, if you like.

Ingredients

  • 250 g (9 oz) basmati rice
  • 2 tbsp sunflower or groundnu

Method

  1. Tip the rice into a bowl and cover with cold water. Leave to soak for 30 minutes, then rinse and drain. Heat the oil in a saucepan over a medium heat and cook the onion until soft and pale gold. Add the garlic and cook gently for 2 minutes, add the spices and bay leaves and turn them over in the oil for a couple of minutes more.
  2. Stir in the rice, season and add
