Sometimes you. want a more colourful rice dish to dub up a plain piece of chicken or fish. Here’s a really simple way to do this, using the Rasta colours of red, green and yellow, or as we say, gold. Use an empty coconut-milk can as a measure for your rice.


  • 1 canful of long-grained rice (measure this using the empty coconut-milk can)
  • 1 red pepper, deseeded and cut into 2 cm (¾ in) dice


  1. Tip the rice into a bowl and cover with cold water. Leave to soak for 30 minutes, then rinse it really well and drain.
