Known as arroz verde in Spanish, this dish looks brilliant because of the bright colours. Try it with my Cuban Roast Pork.


  • 340 g (11¾ oz) long-grain white rice
  • 2 green peppers, deseeded and roughly chopped


  1. Tip the rice into a bowl and cover with cold water. Leave to soak for 30 minutes, then rinse it really well and drain.
  2. Put the peppers, spring onions, parsley and coriander in a blender or food processor. Season with salt, add 2 tbsp. water and whizz until smooth.</
