This is a strange one! Eaten as a kind of pre-meal tongue-tickler, it is basically lightly pickled mango. it’s irresistible once you’ve tried it and great in hot weather with a long, cool drink.

Ingredients

  • 1 large mango, slightly under-ripe, peeled and stoned (see page 25)
  • 2 garlic cloves, crushed
  • ½ tsp

  1. Slice the mango cheeks into neat pieces, then carefully remove the mango flesh from the sides of the stone and cut into nice slices.
