Ingredients: 3 tsp ground cinnamon; 1 tsp grated nutmeg; 200 g (7 oz) plain flour; 100 g (3½ oz) raisins; 100 g (3½ oz) butter, melted, plus extra for the tin; 1 tsp salt; juice of 1 orange; 1 tbsp rum; 200 ml (7 fl oz) coconut milk; 3 tsp vanilla extract; single cream, to serve; 200 g (7 oz) soft brown sugar; 1 kg (2 lb 4 oz) sweet potato, grated; 2 large eggs

A beautiful, golden pudding, this is a Jamaican classic. Back in the Caribbean, we often make it in a pot over hot coals with more piled on a lid on top. As the saying goes, ‘Hell-ah-top, Hell-ah-bottom - and Hallelujah in the middle!’
