This is an ambrosial concoction - food for the gods! Use it to fill cakes (there’s a recipe), for topping scones, or just for spreading on your toast (I’ve also been known to have a spoonful on vanilla ice cream). Make sure your butter is at room temperature before you start.

Ingredients

  • 2 eggs, lightly beaten
  • 125 ml (4 fl oz) passion fruit pulp (about

Method

  1. Put the eggs, passion fruit, lime zest and juice and sugar in a bowl set over a pan of simmering water. Stir continuously with a wooden spoon for 12 minutes, until the mixture becomes thick.
  2. Remove from the heat and whisk in the butter. Leave to cool. Eat immediately, or spoon into a sterilised jar while still hot and seal (see page 125 for sterilising instruct
