These delicious small pies, called skaltsounakia, always dazzle people and are a favourite at every meze table. In Crete, where they are very popular, there are several variations, including one with a filling of sautéed wild greens. Feta cheese, which is the star ingredient in the filling, is commonly found among the mezethes in Greece in one guise or another.
