Salads in Greece are clean-tasting and often quite lemony in flavour, like this one, maroulosalata me roka. The national preference for strong-tasting leaves – sometimes quite bitter ones – is also reflected in salads. Wild rocket is a favourite ingredient, added to give salads a peppery edge.
