Salads in Greece are clean-tasting and often quite lemony in flavour, like this one, maroulosalata me roka. The national preference for strong-tasting leaves – sometimes quite bitter ones – is also reflected in salads. Wild rocket is a favourite ingredient, added to give salads a peppery edge.

Method

If the rocket leaves are young and tender, they can be left whole, but older ones should be trimmed of thick stalks and then sliced coarsely. Discard any tough stalks.

Slice the cos or romaine lettuce hearts into thin ribbons and place these in a bowl, then add the r
