Spoon preserves are made with various types of fruit in a luscious syrup. Figs, cherries, grapes and apricots are all suitable, as are small bitter oranges, which are left whole. You may also find preserved fresh green walnuts stuffed with whole cloves and almonds. A beautiful preserve is made from rose petals, and some more unusual ones are made from small aubergines or plum tomatoes.
