This unusual dish, kalamarakia me horta, is occasionally made for special feasts on the island of Crete. Squid is a wonderful ingredient, especially when it is bought and used fresh. This dish makes a superb meal with crusty bread and crisp, fresh salad.

Ingredients

  • 1 kg/ lb fresh squid, cleaned
  • 120 ml/4

Method

Rinse the squid inside and out, then drain. Slice the body in half vertically, then slice into 1.25 cm/½ in strips. Cut each tentacle into smaller pieces.
