This is not my own invention. It belongs to Mediterranean and Arabic peoples and can be found throughout the region in all its guises. I chose it because it makes a perfect courtyard dish and, with a good bread to accompany it, is a simple delight.

One of those perennial dishes that is passed down within cultures and across cultures. Fresh, good-quality garlic and perfect brie are mandatory. Both can be found locally: certain Australian cheesemakers produce excellent bries.
