A Thai-style dressing with a Mediterranean-style salad makes this another cross-cultural experience that works surprisingly well. Ground shrimp is the basis for many Thai-style dishes, especially salads. You may find its aroma overpowering, but once combined with other ingredients it becomes quite subtle.
Peel cucumbers and cut into large, round slices. Cut the onion in half and again into thin slices. Wash and separate the bunches of mint, watercress and coriander into sprigs and combine with the rocket.
Combine ingredients thoroughly.
