This is the speciality of my mother, Cheong Sow Keng. She travelled to Dingwu mountain in Guanzbou, China, an area renowned for its vegetarian dishes, and has prepared this particular dish ever since. Knowing that the younger generation is not prepared to devote the necessary hours to its creation at this stage of their lives she usually serves it at Liew family gatherings. Being the chef of the family I have often prepared this dish (always with her guidance) for Chinese New Year or Moon F
