The Chinese believe elephant eyes bring good fortune, but relax, no illegal game hunting is required—this is a trompe l’oeil dish. The eyes are in fact halved pigeon eggs garnished with ham to form an ocular illusion.

The brandade cubes are prepared using mashed salted cod that must first be soaked in several changes of fresh water for 24 hours. This softens the fish to an almost fresh state, and desalinates it. Once prepared, the cube mixture must be chilled overnight to firm it fo
