A combination the Chinese would call ‘precious’. A delectably clean stock, clear and without any trace of oiliness, accompanied by lightly cooked yet tender greens. Eating this dish gives one a feeling of well-being and comfort and so it is enjoyed by Chinese families as a restorative. You will find choy sum in Chinese grocery shops or in certain greengrocers.
