Glen Dentice developed this dessert using the irresistible partnership of tangy lemon and lime. As an alternative topping, make a caramel toffee and crush it into a powder. Sprinkle this over the top of the tart and place under the griller until the toffee melts.

Preheat the oven to 180°C. Finely chop and double blanch the lemon zest. Rub the butter, vanilla seeds, sugar and flour together to the fine grain stage. Add the zest then the lemon juice and egg until a dough is formed, but don’t over
