Corn or maize has been cultivated for more than 7,000 years in America and it is still a staple food, especially in Central America and Mexico. Fresh and dried, whole and ground, it is the main ingredient for many dishes. The Peruvian variety is distinctive, with a large white grain on a big cob. It is sweet, though not as sugary as the varieties grown in North America, and it is simply delicious.
