Of all the different hams in Peru, this is a national favourite. Bakeries and cafés sell slices of it, carved while still warm and stuffed into a warm, freshly baked French roll with some onion salsa. If annatto seeds are unavailable, make a similar flavour by mixing together 15ml/1 tsp of paprika with 2.5ml/½ tsp of turmeric.
