Another wonderful avocado recipe, this sandwich is a delicious mix of three flavours, with the addition of mayonnaise (preferably home-made) and white bread. It could not be simpler to make, but when freshly made the result tastes really luscious. It makes a satisfying snack or light lunch.

Ingredients

  • 2 ripe avocado
  • lemon juice, for sprinkling
  • 24 thin slices of good quality white bread

Method

  1. Peel the avocados and remove the stones (pits). Slice the flesh thinly and sprinkle with lemon juice to stop it turning brown.
  2. Spread a slice of bread with a thin layer of mayonnaise and cover with a layer of avocado slices. Sprinkle with salt.
