Peruvian cocktails are many and varied. Some of the ingredients are unique to Peru, such as pisco and chicha de jora (sprouted maize, cooked and fermented), while indigenous fruits such as the custard apple, guanabana (soursop) and lucuma, make good bases for cocktails. The pisco sour has acquired all-time classic status.

Ingredients

  • 1 egg white
  • 60 ml/4 tbsp gomme syrup or sugar

Method

  1. Put the egg white, gomme syrup or sugar, lime juice and ice cubes in a blender and blend until the ice is crushed. Add the pisco and blend for 1 minute.

  2. Take two short cocktail glasses, and add two drops of Angostura bitters to each glass. Pour the frothy
