This simple soup used to be made as a kind of medicine for sick people who needed building up. Easy to digest, it helped to give them the strength to fight off illness. Although humble it is very nutritious and is excellent for the elderly, children or anyone who is under the weather and needs to avoid rich food for a few days.

  1. Put the vegetables into a large pan. Add the stock cubes and 3 litres/5 pints/12½ cups water. Bring to the boil, then lower the heat to medium and cook, covered, for 25 minutes. Season with salt to taste.
