Seafood rice soup

Aguadito is the name given to a rice soup, usually flavoured with coriander, in which the main ingredient may be meat, poultry or seafood. It comes from the north of Peru, where the climate is hot and the inhabitants are very wedded to their traditional dishes. This recipe uses the large New Zealand greenshell mussels, which you can purchase frozen in their half shells.
