This is one of the most special of all Peruvian dishes. The word chupe can be translated as ‘chowder’, and it means a hearty soup containing meat or fish, eggs, potatoes, vegetables and rice or noodles; a complete meal in one dish. In many parts of the world fishmongers sell crayfish live, in which case they are quickly immersed in boiling water, before being cleaned.
